Smoked chicken and apple soup with low sodium and low fat. Perfect for CKD and diabetes-friendly lunches and dinners.
Ingredients
- 1 tablespoon canola oil
- 1 onion, diced
- 4 stalks celery, diced
- 3 Granny Smith apples, peeled, cored & diced
- 1 teaspoon ground thyme
- ½ teaspoon dried sage
- 4 cups chicken stock, low sodium (do not use low sodium stock that contains potassium chloride)
- ½ teaspoon liquid smoke
- 1½ teaspoons horseradish
- 1 teaspoon apple cider vinegar
- 1 teaspoon sugar
- 1 pound of boneless, skinless chicken breast

Directions
Nutritional Information Prep: 20 min, Cook: 45 min, Total: 1 hr 5 min
- Over medium heat in a soup pot, add oil, onions, celery and apples and sauté until onions become translucent.
- Add thyme and sage and cook for 1 minute.
- Add chicken stock, liquid smoke, horseradish, vinegar and sugar;
- simmer for 10 minutes.
- Using an immersion blender, blend the soup at this stage in the soup pot.
- Add diced chicken and simmer for 10 more minutes or until the chicken is cooked.
