Smoked Chicken and Apple Soup

Smoked chicken and apple soup with low sodium and low fat. Perfect for CKD and diabetes-friendly lunches and dinners.

Ingredients
  • 1 tablespoon canola oil
  • 1 onion, diced
  • 4 stalks celery, diced
  • 3 Granny Smith apples, peeled, cored & diced
  • 1 teaspoon ground thyme
  • ½ teaspoon dried sage
  • 4 cups chicken stock, low sodium (do not use low sodium stock that contains potassium chloride)
  • ½ teaspoon liquid smoke
  • 1½ teaspoons horseradish
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 pound of boneless, skinless chicken breast

Directions
Prep: 20 min, Cook: 45 min, Total: 1 hr 5 min
  1. Over medium heat in a soup pot, add oil, onions, celery and apples and sauté until onions become translucent.
  2. Add thyme and sage and cook for 1 minute.
  3. Add chicken stock, liquid smoke, horseradish, vinegar and sugar;
  4. simmer for 10 minutes.
  5. Using an immersion blender, blend the soup at this stage in the soup pot.
  6. Add diced chicken and simmer for 10 more minutes or until the chicken is cooked.
