Creamy Lemon Popsicles

Cool off from summer with these delicious frozen lemon and date popsicles. This unique combination offers natural sweetness without being overly sweet, using dates instead of refined sugars for sweetness. With only four ingredients, these popsicles are simple to prepare.

  • 6 ounces water
  • 3 Medjool dates, pitted
  • 3 ounces low-fat cream cheese
  • ⅓ cup fresh lemon juice
  • ½ teaspoon vanilla extract

  1. Heat water until warm and soak pitted dates for 15 minutes.
  2. Squeeze 1-2 lemons to obtain 1/3 cup fresh lemon juice. Remove any seeds, you can use the pulp in the recipe.
  3. In a blender, combine all ingredients. Process for 2-3 minutes until smooth.
  4. Pour mixture into a 6-popsicle mold for the freezer.
  5. Freeze for a minimum of 4 hours.
  6. Enjoy each popsicle immediately.

 

Substitutions:

  • You can add more lemon juice for a stronger lemon flavor.
  • You can use vegan cream cheese if preferred.
  • Using regular cream cheese will provide more total fat and saturated fat.
