Fiesta Salad, great for CKD patients. Low in calories, fat, and phosphorus. A crisp and colorful salad with a tasty, healthy twist!
Ingredients
- 1½ cups Romaine lettuce
- 1 cup endive or chicory
- ½ small tomato, diced
- 4 baby carrot, shredded
- ½ green bell pepper, sliced
- ½ red onion, diced
- ¼ cup sweet yellow corn
- 1 flour tortilla, browned and cut into triangles (cut like a pizza)
- ½ cup sour cream, for garnish
