Sweet Potato Wedges: Baked sweet potato wedges served with a reduction of apple cider and almond extract for a delicious, healthy side.
Ingredients
- 2 cups apple cider or unfiltered apple juice
- ¼ teaspoon almond extract
- 2 large sweet potatoes, each cut into 8 wedges
- Vegetable oil, spray

For Sauce
- Simmer apple cider in a saucepan over medium heat 45 minutes to 1 hour, or until reduced to a thick syrupy (about ¼ cups).
- Add almond extract and let cool to room temperature.
For Sweet Potatoes
- Preheat oven to 350°F.
- Cut each potato into 8 wedges.
- Spray sweet potato wedges with oil and place on an oiled baking sheet. Bake 45 minutes, or until tender and beginning to brown. Turn several times while cooking.
- Transfer to platter, and dip wedges into apple cider reduction or drizzle the reduction over the wedges.
