  • 2 cups apple cider or unfiltered apple juice
  • ¼ teaspoon almond extract
  • 2 large sweet potatoes, each cut into 8 wedges
  • Vegetable oil, spray

For Sauce

  1. Simmer apple cider in a saucepan over medium heat 45 minutes to 1 hour, or until reduced to a thick syrupy (about ¼ cups).
  2. Add almond extract and let cool to room temperature.

For Sweet Potatoes

  1. Preheat oven to 350°F.
  2. Cut each potato into 8 wedges.
  3. Spray sweet potato wedges with oil and place on an oiled baking sheet. Bake 45 minutes, or until tender and beginning to brown. Turn several times while cooking.
  4. Transfer to platter, and dip wedges into apple cider reduction or drizzle the reduction over the wedges.
