One-Pot Lentil Soup

Hearty one-pot lentil soup with Swiss chard & kale. Low sodium, high fiber, kidney-friendly, and perfect for a comforting meal.

Ingredients
  • 1 cup uncooked, rinsed lentils
  • ½ cup uncooked brown rice
  • 3 cups sliced carrots
  • 1 lb Swiss chard, cleaned and chopped
  • 1 lb kale, cleaned and chopped
  • 3 cups water
  • 1 packet (2 oz or 4 Tbsp) onion soup mix, reduced sodium
  • 1 tsp basil
  • 1 Tbsp olive oil

Directions
Prep: 10 min, Cook: 30 min, Total: 40 min
  1. Place all ingredients in large pot. Bring to a boil.
  2. Reduce heat, cover and cook until rice is tender (about 20 to 30 minutes).
