- Preheat oven to 350F. Grease a 9×9-inch baking dish.
- Reduce heat, cover and cook until rice is tender (about 20 to 30 minutes). In a medium bowl, stir the zucchini together with the eggs.
- Add in the remaining ingredients, except the chocolate chips, and mix until well combined.
- Pour brownie batter into the prepared baking dish. Sprinkle the top with chocolate chips.
- Bake at 350F for 30 minutes and enjoy!
