- 1 medium onion, diced
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground turmeric
- 1 tablespoon apple cider vinegar
- Fresh ground black pepper to taste
- Fresh cilantro, chopped (for garnish)

1. Heat the olive oil in a large skillet over medium heat.
2. Sauté the onions, bell peppers, and garlic until softened.
3. Add the lean ground beef, breaking it apart with a spoon, and cook until browned.
4. Stir in the cumin, oregano, and turmeric, mixing thoroughly.
5. Pour in the apple cider vinegar. Stir well.
6. Reduce heat, cover, and simmer for about 20 minutes, stirring occasionally.
7. Season with black pepper to taste and garnish with fresh cilantro before serving.
