Chocolate Zucchini Brownies

  • 1 zucchini, shredded
  • 2 eggs
  • ¼ cup cocoa powder
  • 1 cup almond flour
  • 2 tbsp melted butter
  • ¼ cup sugar
  • ½ tbsp baking powder
  • ¼ cup unsweetened chocolate chips

Directions
Prep: 10 min, Cook: 30 min, Total: 40 min
  1. Preheat oven to 350F. Grease a 9×9-inch baking dish.
  2. Reduce heat, cover and cook until rice is tender (about 20 to 30 minutes). In a medium bowl, stir the zucchini together with the eggs.
  3. Add in the remaining ingredients, except the chocolate chips, and mix until well combined.
  4. Pour brownie batter into the prepared baking dish. Sprinkle the top with chocolate chips.
  5. Bake at 350F for 30 minutes and enjoy!
